Sindhi Saag is a low-fat dish prepared with minimal oil, making it a nutritious and flavorful option. The leafy greens, such as spinach or amaranth leaves, are rich in essential nutrients like vitamins A, C, and K, as well as minerals like iron and calcium. These greens provide dietary fiber, supporting digestive health. The spices used, including cumin, coriander, and turmeric, bring antioxidant properties that help neutralize free radicals in the body and offer anti-inflammatory effects.
2. Place spinach. Split Bengal Gram, tomatoes, potatoes, onions, turmeric and salt with 2 inches water above the ingredients in a pressure cooker and cook for 20 mins (2 whistles).
3. Add cumin seeds, Asafoetida and chopped garlic in oil and let it simmer for 2 minutes and add to the above boiled ingredients.
4. If it is too watery you can let the entire contents simmer till the extra water evaporates.
