Sheer Korma

-0.5pkg / 200gm Vermicelli
-0.5gallon / 1892.5gm Milk
-0.5cup / 110gm Sugar
-12clove / 120gm Whole Cardamom Pods
-0.25tsp / 0.75gm Cardamom Powder
-0.5cup / 70gm Slivered Almond Cashews And Pistachioes
-0.25cup / 57.5gm Heavy Cream
-0.25tsp / 1.25gm Saffron Strand
-2tbsp / 30gm Charoli Nuts
-0.25cup / 62.5gm Light Brown Raisins
-0.25tsp / 1gm Rose Water
-0.5tbsp / 7gm Butter

Methods

1. Fry the vermicelli in butter over low heat until well browned. Do not burn and let all the butter dry up.

2. Add in 1/4 cup of sugar and fry again.

3. Add in the whole milk cup by cup, stirring continuously, and bring to a boil.

4. Add in the raisins, whole cardamom, and 1/2 cup of slivered almonds, cashews and pistachios, and the remaining sugar.

5. Lower the heat and thicken the Sheer Korma to three-strand consistency, letting the milk boil until it is halved.

6. The vermicelli must be very tender by now.

7. Quickly add in the rose water, charoli nuts and fresh cream.

8. Let simmer covered for 10 minutes.

9. Garnish with saffron strands and powdered cardamom, and serve instantly!
