Gujiya

Gujiya is a popular Indian sweet typically made during festivals. Khoya is made by reducing milk, and it is a source of calcium and protein. Calcium is essential for bone health, and protein is necessary for muscle repair. Nuts also contribute protein and various essential nutrients such as vitamins and minerals.Some spices used in Gujiya, such as cardamom and nutmeg, may have antioxidant properties.

Ingredients

-0as required / 20gm Melted Ghee
-500gm / 500gm Maida Flour
-6tbsp / 84gm Cooking Oil
-600gm / 600gm Khoya
-0.5tsp / 1.5gm Cardamom Powder
-25gm / 25gm Almond chopped
-25gm / 25gm Raisins
-25gm / 25gm Dry grated Coconut
-350gm / 350gm Sugar

Methods

1. Sieve the flour.

2. Mix the 6 tablespoon oil with the maida.

3. Using fingers, mix well so that the mixture takes the form of breadcrumbs and binds to a certain extent.

4. Now add some water and knead lightly.

5. Keep adding water as required and knead into a soft but tight dough.

6. Set aside and cover with a damp cloth.

7. Now mash the khoya and fry it in a kadhai / deep pan till light brown in color.

8. Add sugar and cardamom powder into the khoya and mix well.

9. Add almonds, cashews, coconut and raisins.

10. Fry for 2 minutes and remove from the heat.Allow it to cool.

11. Divide the dough into small balls and roll each ball into a small round of 4 inch diameter.

12. Fill half the round with the khoya mixture, fold it and seal the round, twisting the edges inwards.

13. Take care that the filling does not ooze out.

14. Prepare all the gujiyas and spread on a cloth.

15. Heat ghee in a kadhai and deep fry the gujiyas in batches on a medium flame.

16. When golden brown in colour, drain and remove.

17. Store for use in an airtight glass jar!
